Chili and Cornbread

  • Chili Ingredients

    For the Chili:
    • 2 cups dried pinto beans (soaked overnight then precooked for 2 hours before the show starts), or 3 cans of your favorite beans such as a combination of pinto, kidney, & black beans
    • 1 lbs. ground beef, turkey, bison, soy chorizo, or preferred protein
    • 1 T olive oil
    • 1 large yellow onion
    • 1 green bell pepper
    • 1-2 chipotles in adobo (or substitute fresh jalapeno)
    • 2 cans diced tomato (fire-roasted is great here)
    • 1 can of tomato puree
    • 1 small can of tomato paste
    • 1 cup of dark beer (Porter or Stout)
    • 3 T dark chili powder or to taste (many prefer more!)
    • 1 T ground cumin
    • 2 T dried Mexican oregano (or regular oregano)
    • Salt and pepper to taste
    • Garnish with your favorite toppings: shredded cheddar cheese, sour cream, avocado, cilantro
    For the cornbread:
    • 1 T bacon drippings or some other oil (bacon drippings adds great flavor!)
    • 2 cups cornmeal OR 1 1/2 cups cornmeal and 1/2 cup flour
    • 1 t baking soda
    • 1 t salt
    • 1 T sugar (optional)
    • 1 large egg (optional)
    • 1 1/4 cups buttermilk
    • 6 T unsalted butter, melted
    Special equipment needed – Large stockpot for chili, 9-10 inch cast iron skillet (preferred) or 8x8 baking dish for the cornbread

    4 tbsp olive oil
    1 tbsp honey or agave
    8 corn tortillas
    2 cups of rice
    1 can of black beans
    1 tbsp chili powder
    1 tsp cumin
    ½ tsp garlic powder
    ½ tsp onion powder
    ¼ tsp oregano
    Salt and pepper to taste

Meatballs: Cloudy With A Chance of Meatballs

  • Meatball Ingredients

    Ingredients:
    • 2 pounds of ground meat, turkey, beef, or Italian sausage, whatever you can find! Chef and I will be using a 50/50 mix of beef and Italian sausage
    • ½ medium onion, chopped
    • 1 large egg
    • 6 cloves garlic, minced
    • 1 cup of grated parmesan cheese
    • 1 cup of bread crumbs
    • 3 tbsp of fresh or dried parsley
    • 1 tsp of fresh or dried basil (try to get fresh basil to follow our basil chiffonade garnish demo!)
    • 1 pound of pasta
    • 2 cups of pasta sauce
    • ½ stick of butter
    • 1 loaf of French bread
    Serve with your favorite sauce.
     

Chicken Lo Mein

    SHOPPING LIST
    • 1 pound of chicken, thinly sliced, or your favorite protein (beef, tofu, etc.)
    • ¼ cup soy sauce
    • 2 tbsp hoisin sauce
    • 1 tbsp brown sugar
    • ¼ cup water
    • 2 tbsp corn starch
    • 1 tsp ground black pepper
    • 2 tbsp sesame oil
    • 3 tbsp olive oil
    • 3 cloves garlic minced
    • 1 tbsp fresh ginger
    • 1 lbs. Lo Mein noodles
    • 4 green onions / scallions 
     
    Your favorite stir fry veggies! Chef will use the following:
    • 1 carrot
    • 1 red bell pepper
    • 1 head of broccoli
    • 1 cup mushrooms

Mac and Cheese

    Mac & Cheese
    • 1 lb. macaroni pasta 
    • 1/2 onion
    • 3 garlic cloves
    • 4 tbsp butter
    • 4 tbsp flour
    • 1/2 c white wine
    • 2 c milk
    • 1 1/2 lbs shredded cheese (your choice, cheddar/colby/jack for yellow, we will use a Gruyere/Emmental/aged white cheddar mix)
    • 1 tsp thyme
    • salt and pepper to taste 
    Dessert: Heisse Liebe (Hot Love)
    • 2 c red wine
    • 2 c sugar
    • 2 pints raspberries
    • 1 tsp vanilla
    • 1 tub of favorite vanilla ice cream

Pizza

  • Pizza Ingredients

    Gather ingredients.
    For the Pizza Dough watch Chef Aaron's Live & Learn video on making homemade pizza dough! For two crusts:
    • 1 1/2 cups of warm water
    • 2 packages or 4 1/2 teaspoons dry active yeast
    • 4 cups of flour, plus a little more to dust work area
    • 2 teaspoon sugar
    • 2 teaspoon kosher salt
    • 6 tablespoons olive oil, plus a bit more to coat the bowl
    You need two pizza crusts, so either use chef's recipe, order two pizza kits from Royal Crest Dairy, or buy two Boboli crusts or two chilled crusts from the dairy section at your local grocery store.

    For the Pizza Sauce:
    • 1-12 oz. can tomato sauce
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • salt and pepper to taste
    For the Pizza Toppings:
    • 3 tablespoons olive oil, to brush pizza crusts
    • 2 cups shredded mozzarella, split 1 cup for each pizza
    • Pepperoni
    • 1/4 cup of sliced mushrooms
    • 1/8 cup of red onion, diced
    • Or any other toppings your family enjoys!
    For the Salad:
    • Your favorite salad greens; Chef will use a spring mix
    • 1 golden delicious apple
    • 1/2 of a lemon (or a teaspoon of lemon juice to keep the apple from browning)
    • 1/2 red onion, julienned
    • 1/2 cup of blue cheese (or goat cheese)
    • 1/2 cup olive oil
    • 1/4 cup balsamic vinegar
    • 1 tablespoon dijon mustard
    • 1 teaspoon dried basil
    • 1 clove of garlic, or 1/2 teaspoon of granulated garlic
    • 1 teaspoon honey or agave
    • 1/2 cup of candied walnuts
    • Salt & pepper to taste
    Other Kitchen Tools Needed:
    • A mason jar, protein drink shaker, or some other container with a lid to make your dressing
    • 2 pizza pans or sheet pans (cookie sheets)
    • Pastry brush
    • Pizza cutter
