Lynette Emery, former Graland parent and art teacher, shared her recipe for cranberry bread, always a winter favorite:

2 C. flour
1 to 1 ½ tsp. baking powder
½ tsp soda
1 egg
¼ cup butter cut into pieces
½ C. nuts (preferably pecans)
1 C cranberries
1 tsp.salt
Pared outer skin of ½ orange
Pared outer skin of 1 lemon
1 C. sugar
¾ C orange juice

In a large bowl sift together flour, baking powder, and soda and set aside. Put next seven ingredients into a blender until fruit rinds are grated fine. Add nuts and cranberries and blend only until chopped. Empty blender mixture into flour mixture and fold the two together only long enough to be sure all flour is wet. Pour or spoon into loaf pan. Bake in a 350-degree oven for 40-50 minutes or until toothpick comes out clean.
