THE GRALAND GOURMET: JANE SANDERS

GREAT AUNT GERTIE’S CHEESECAKE

This recipe comes from Jane Sanders, former Graland parent and an irreplaceable Jack of many trades in our Business Office when her husband, Larry Sanders, was the Business Manager.

1-½ lbs.pot cheese (farmer’s cheese or Italian Ricotta)
½ lb. cream cheese
1 pt. sour cream
6 eggs, separated
1-¾ cup sugar
4 tablespoons of butter, slightly melted
4 tablespoons of cornstarch
2  tsp.vanilla

CRUST:
1 box Zweibeck or graham crackers-- rolled very fine
½ cup of melted butter
½ cup of sugar

Make the crust and put in a pie plate. Mix all ingredients, except the eggs together. Add the yolks of eggs, beating well after adding each one. Beat whites stiff and fold in. Put in the crust. Bake in a moderate oven-- 350 degrees--for about one hour or one hour and ½. The crust can be bought already prepared.
