We continue our special series with a recipe from the late Lorraine “Snooky” Claussen, one of Graland’s most beloved parent volunteers:

Aunt Jeanne’s Mulligatawny Soup

1 chicken cut up
¼ cup flour
¼ cup butter
1 small onion chopped
½ green pepper-chopped
2 medium carrots
2 tart apples -peeled and chopped
2 tablespoons parsley
1 tablespoon salt
¼ tsp. pepper
2 tsp. curry powder
¼ tsp. nutmeg
2 cloves
1 can tomatoes (1 lb 12 oz)
1 qt. water

Dredge chicken in flour; brown in butter. Mix chopped vegetables, apples, and seasonings; add tomatoes, water, and chicken all in a large pot. Cover and simmer 1 to 1 ½ hours. Remove chicken bone and cut into small pieces. Strain vegetables and force through a food mill. Add chicken to the vegetables, pulp, and liquid and liquid. Heat and serve. Serves four-six. Heat and serve.
