THE GRALAND GOURMET: ANNE RICKENBAUGH AND GREG KINTZELE
Let’s spend two days with young cooks. Today, I bring you something for lunch, courtesy of Anne Rickenbaugh ‘80. Our first-grade chef will prepare Chicken Casserole for our lunch
1 pt. cooked chicken
1 can cream of chicken soup
1 cup milk
¼ cup cut up celery
1 can of chow mein noodles
Mix well and pour into a greased casserole dish. Bake at 350 degrees until hot and bubbly.
Anne’s classmate, Greg Kintzele ‘80, is cooking up a praline dessert to accompany our lunch.
1 cup brown sugar (solid)
1 tablespoon (heaping) cornstarch
1 cup boiling water
1 tablespoon vanilla
½ or ¾ cup pecans
Combine sugar and cornstarch in saucepan. Slowly add water and cook, stirring constantly until thick and clear. Add vanilla and pecans. Refrigerate well and serve in sherbet glasses. Top with whipped cream.
