½ pound butter
1 cup superfine sugar
4 eggs, separated
¾ cup semolina
½ cup flour/ sifted
½ teaspoon baking powder
1 small nutmeg, grated
¼ teaspoon caraway seeds
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
2 cups flaked coconut
¼ cup coconut milk
powdered sugar

Preheat the oven to 350 degrees. Grease and flour one 9-inch cake pan.

Cream the butter and sugar thoroughly. Add the egg yolks one at a time. Beat the egg whites until stiff. Add them to the creamed mixture. Add the semolina.

Combine the flour, baking powder, nutmeg, caraway, cinnamon, and ginger. Gradually add the dry mixture to the liquid mixture, beating thoroughly. Add the coconut and the coconut milk. Stir to blend.

Pour the batter into the prepared pan. Bake for twenty minutes, or until a toothpick inserted in the middle comes out clean. Dust the top of the cake with the powdered sugar
