STEAMED RED SNAPPER

1-2 pound red snapper or red snapper fillets
¼ cup soy sauce
¼ cup oil
Peel of 1 tangerine, sliced into small pieces
1 medium onion, thinly sliced
¼ pound mushrooms, sliced

Wash the fish and pat it dry. In a flat dish, combine the soy sauce and the oil. Marinate the fish for 20-30 minutes. Turn the fish a few times in the marinade.

Place the fish on a steamer rack and top it the tangerine peel, onion, and mushrooms.

Steam the fish, using a guide of ten minutes per inch for the cooking time. Measure the fish at its thickest part.

Serve the fish on a warmed platter with the tangerine peel, onions, mushrooms, and about ½ cup of the steaming broth.
