FLORENTINE SOUP

1 10-ounce package frozen chopped spinach
1 cup canned cannellini beans
2 14 ½-ounce cans of chicken broth
¼ teaspoon dill weed
salt to taste
1 bay leaf
2 egg yolks
2 tablespoons lemon juice
1 cup cooked rice
grated Parmesan to taste

Cook the spinach as directed on the package. Do not drain.
In a blender or a food processor, puree the cannellini beans in their liquid with one can of chicken broth.

In a large pot, add the second can of chicken broth, thyme, dill weed, salt, and bay leaf. Add the spinach to the pureed beans. Bring the mixture to a boil and simmer for thirty minutes.

Beat the egg yolks with lemon juice. Slowly add the lemon-egg mixture to the simmering soup, stirring constantly. Do not allow the soup to boil. Add the cooked rice.

Serve the soup hot or cold with the grated Parmesan cheese sprinkled on top.
