1 cup sugar
½ cup butter
8 medium apples, pared and cored
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1 stick pie crust
whipped cream

Preheat the oven to 450 degrees.

Place the sugar in a heavy 10-inch skillet which is ovenproof. Cook the sugar over medium heat until it melts and becomes a light brown syrup. Remove from the heat and add the butter, stirring until melted.

Arrange the apples in a layer, rounded side down, in the sugar syrup. Make a second layer, rounded side up, fitting the pieces between the pieces between the pieces in the first layer. Fill any remaining pieces with apple pieces. Mix together the lemon juice and grated zest. Sprinkle it over the apples.

Prepare the pie crust mix according to package directions. On a lightly floured surface, roll the pastry to make a 10-in circle. Place the pastry circle over the apples.

Bake for 25-30 minutes, or until the crust is golden brown. Invert the tart onto a shallow serving dish. Serve warm and garnish with whipped cream.
